From Bangkok to Manila

When global kitchen technology leader RATIONAL needed to showcase how modern innovation can preserve deep culinary traditions across international borders, they trusted Mandolin Media to produce a documentary-style customer reference film for JT’s Manukan Grille.

As a video production agency based in Bangkok, we travelled from Thailand to the Philippines for a multi-location shoot across Metro Manila, Imus and Cubao. The brief was to show how JT’s protects the character of Filipino chicken inasal while building a consistent, efficient operation for a growing international brand.

Our production team combined creative direction, producing and cinematography with careful planning on the ground. We worked closely with the client and JT’s team to create a film that felt authentic, informative and visually engaging rather than overly scripted. consisting of our Creative Director and Producer alongside our senior Director of Photography. Our crew collaborated closely on location with our client's regional marketing manager and from our to deliver the exact video assets outlined in the project brief.

This project - a high-end Our Role and promotional asset package for the iconic Filipino restaurant chain JT’s Manukan Grille - perfectly illustrates why lean, multi-skilled production crews are the smartest choice for regional brand documentaries.

For this Mandolin Media case study, we handled the production from story development and interview planning through to location coordination, filming and visual direction. The project brought together brand storytelling, food cinematography and practical coverage of a working restaurant environment.

Starting with the story

Documenting the rhythms of daily farming life, from early morning tasks to the natural beauty of the rice fields.
Speaking with Paul Henares about the challenges of expanding the brand internationally and the day-to-day operations behind delivering a consistent customer experience.

JT’s Manukan Grille is built around Bacolod-style chicken inasal and the recipes Joel Torre and Cristy brought to the brand. We wanted the film to begin with the taste of home: the original timpla being prepared, chicken being marinated, trays being loaded and the finished dish being served.

Balancing heritage with technology

The central story was not technology replacing tradition, but technology helping the brand protect it. We filmed the RATIONAL iCombi Pro in use, showing how controlled heat and humidity support consistent results across different locations and help the team prepare for busy service periods.

Recording a heartfelt interview with a local farmer, sharing the realities and traditions behind their work.
Filming a chef preparing a traditional dish using the RATIONAL iCombi Pro, capturing each step of the cooking process.

A documentary approach to interviews

Interviews with Joel Torre and Paul Henares gave the film two connected perspectives: the brand’s origins, the operational challenges of international expansion and the daily reality of serving customers during peak hours.

Our shot list was designed around real actions rather than isolated product demonstrations. We captured staff loading trays, selecting programmes, checking the cook, reviewing finished chicken and working alongside a RATIONAL chef. Macro food shots brought out the marinade, caramelised skin, steam and texture.

We also filmed mixed-load cooking, iCookingSuite processes, steaming and braising, ConnectedCooking and the iCareSystem cleaning cycle. These scenes made the operational story visual: one multifunctional system supporting consistency and an efficient restaurant workflow.

Capturing these processes in busy restaurants came with its own challenges. Customer flow, lunch periods, ambient sound, staff availability and travel between locations all affect the schedule. Our planning allowed us to prioritise the essential interviews and demonstrations while leaving room for genuine customer and staff moments.

Filming an honest conversation with a local farmer, capturing the stories and traditions rooted in their daily life.

From Bangkok to Manila

Although the shoot took place in the Philippines, the project was managed through Mandolin Media’s wider Southeast Asian production experience. For clients looking for a video production agency in Bangkok delivering international projects requires more than strong visuals. It requires detailed planning, clear communication, local coordination and the ability to adapt on location.

The result

The finished film connected operational performance with something more personal: the comfort of enjoying a familiar dish. The story took viewers from Manila streets and JT’s heritage to the working kitchen, then back to staff, customers and the finished inasal.
